    6 roasted red peppers (thinly sliced) * see note
    1 large red onion (halved and thinly sliced)
    1 clove of garlic (finely chopped)
    2 tablespoons of fresh chives (chopped)
    4 tablespoons of fresh basil (chopped)
    3 tablespoons of extra virgin olive oil
    2 tablespoons of balsamic vinegar
    pinch of sugar
    pinch of salt
    pinch of fresh ground black pepper


Makes 6 servings

Combine all the salad ingredients (except the red peppers) and store in the fridge. Grill the peppers on the barbecue. Add to the salad. Enjoy this delicious dish.
