Introduction

I was craving a scone to have with my coffee this morning. And rather than running down to work (I work at Panera), and wasting 550 calories, I decided to make one that was a tad bit more healthy.

I like my scones on the moist side, so I searched for a moist scone recipe. I found one that called for whole milk, sour cream, and 8 tons of butter ... So I altered it a bit. and YUM!

Ingredients

    2 1/4 C Flour + 1/4 C for forming
    1 1/2 tsp Baking Soda
    3/4 tsp Baking Powder
    1/2 tsp Salt
    1 1/2 tsp Cinnamon, ground

    1 stick frozen Butter, cut into tiny pieces

    1/2 C. Plain Non-Fat Greek Yogurt
    2/3 cup 1% Milk
    1 tsp Vanilla Extract

    OPTIONAL CINNAMON DRIZZLE
    1/2 C brown sugar
    2 T butter
    1 tsp vanilla
    2 T milk


Tips

THE NUTRITION INFO DOES NOT INCLUDE CINNAMON DRIZZLE!

Make sure your butter, yogurt, and milk are cold. If they are not cold, they do not give the scone it's flakiness that make a scone a scone :D

If you are making this recipe for a party, you can cut each scone into 3 to make mini scones. For mini scones, check them after cooking 8 minutes.


Directions

Preheat oven to 375.

Combine dry ingredients (except the extra 1/4C flour) in medium bowl. Add butter and cut into flour until the butter is evenly distributed. Add yogurt, milk, and vanilla, and stir only until dough comes together.

Turn out onto floured surface, and press together to form a rectangle that is about an inch thick. You do not want to handle the dough too much. With cold knife, cut down the center of dough the long way, and then each half into 6 pieces.

Arrange on WELL greased cookie sheet and bake for 12 minutes, or until evenly browned.

CINNAMON DRIZZLE
Melt butter, sugar, and vanilla together on medium low heat until it comes to a simmer. Let simmer 5 minutes. Remove from heat and add milk. Stir. Let stand 10 minutes. Drizzle on scones after they come out of the oven.
