Ingredients

    > 2 tbsp Canola oil
    > 4 cups sliced mushrooms
    > 1 large onion, finely chopped
    > 1 clove of garlic, minced
    > 1/2 tsp each salt and pepper
    > 1 can (19oz, 540 mL) lentils, rinsed and drained
    > 2 tsp curry powder or 1 tbsp curry paste
    > 1/4 cup chopped parsley (or coriander/cilantro)

Directions

> in 1 tbsp of the oil over med-high heat sautee chopped onion, garlic, mushrooms, salt and pepper. About 5 minutes.
> Place sauteed vegetables in food processor with lentils, curry and parsley (or corriander/cilantro).
>Shape into 1 inch patties
> Using remaining oil and the frying pan that you have already used cook each patty about 8 minutes per side or until crusty.
> Top with whatever you like! Serve on a roll, or if you cannot eat bread products, sliced on top of a delicious garden salad.
