Ingredients

3 cup Brown Rice, medium grain
2 serving Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano
1 tbsp Extra Virgin Olive Oil
12 oz Tilapia filet
2 cup Beef Broth - Swanson Low Sodium
1 medium (2-1/2" dia) Onions, raw
1 lime yields Lime Juice
2 cup Peas, frozen
3 tbsp garlic paste
3 tsp paprika

Tips
Pre-cook the rice and make sure you have everything chopped ahead of time. It makes things easier!
Directions
1) Pre-cook the rice based on the instructions and set aside.
2) Cut tilapia (or fish of your choosing) in to bite size pieces. If you choose to add shrimp, do the same for the shrimp.
3) Set a large frying pan on medium heat and add 2 tablespoons extra virgin olive oil. Once the oil is hot, add the onion and garlic paste. Stir until onions are translucent.
4) Add in tilapia now.
5) Add paprika and a pinch of sea salt and pepper. Stir.
6) Add cooked rice and diced tomatoes. Stir and reduce heat to a simmer.
7) Pour in chicken broth. Allow the contents to simmer and gently stir. Allow it cook for about 3 minutes. If you would like, add fresh lime juice.
8) Lastly, add frozen peas and stir. Allow the paella to simmer for about 5 minutes, then garnish with freshly chopped parsley.
