Really good!!I wanted to make a low cal version of wonton soup. There are no "wontons" but, it tastes like them. Really good!!
I wanted to make a low cal version of wonton soup. There are no "wontons" but, it tastes like them.
Number of Servings: 4
Ingredients

2 cans of chicken broth
1 bunch of small bok choy
4 oz browned ground turkey
2 7 oz packages shirataki noodles (yam noodles)
1 buch green onions (scallions)
50% lite soy sauce to taste
hot mustard to taste
Directions
slice and steam bok choy- shock when still tendar crisp in cold water bath- drain- set aside.
rinse and boil shirataki noodles, dry on paper towels. cut up into small pieces
slice green onions to small rings
in medium saucepan, add broth and turkey- bring to a boil reduce heat and simmer about 10 minutes- add shirataki noodles and the green onions, continue cooking a few more minutes. fill bowl with soup, and add bok choy, hot mustard, and soy sauce to taste.- enjoy!!!
I stored the soup and bok choy in seperate containers, I didnt want to taste of the greens to overpower the broth. serves 4
