This is a fantastic three bean salad that is low in calories and high in protein and flavor. It is super fast to make and can accompany any casual lunch or dinner. This is a fantastic three bean salad that is low in calories and high in protein and flavor. It is super fast to make and can accompany any casual lunch or dinner.
Number of Servings: 12

Ingredients

    1 can black beans, rinsed
    1 can dark red kidney beans, rinsed
    1 can garbanzo beans, rinsed
    1 can sweet corn, rinsed
    2 roma tomatos, finely chopped
    5 sprigs fresh cilanto, chopped
    1 cup red onion, finely chopped
    2 Tbsp. red chili powder
    salt to taste

Directions

Pour all of the beans and corn into a collander and rinse well. This is a critical step that will eliminate much of the sodium that can come in a bean salad recipe. Toss the beans into a large bowl and add in tomatoes, onion and cilanto. Add chili powder and salt to taste. Makes 12 1- cup servings
