Introduction

This is a fantastic three bean salad that is low in calories and high in protein and flavor. It is super fast to make and can accompany any casual lunch or dinner. Ingredients

    1 can black beans, rinsed
    1 can dark red kidney beans, rinsed
    1 can garbanzo beans, rinsed
    1 can sweet corn, rinsed
    2 roma tomatos, finely chopped
    5 sprigs fresh cilanto, chopped
    1 cup red onion, finely chopped
    2 Tbsp. red chili powder
    salt to taste

Directions

Pour all of the beans and corn into a collander and rinse well. This is a critical step that will eliminate much of the sodium that can come in a bean salad recipe. Toss the beans into a large bowl and add in tomatoes, onion and cilanto. Add chili powder and salt to taste. Makes 12 1- cup servings
