Ingredients

    6 medium potatoes, chopped
    6 scallions, chopped
    1 1/2 cup carrots, chopped
    4-5 Tbs butter, unsalted or olive oil
    3 6-oz cans Salmon, skinless, boneless, drained and flaked
    3-4 cups Seafood broth [2 qts]
    4 cup Rice Dream Original rice milk [2 qts]
    1 1/2 cup corn
    1 Tbs each Parsley & Rosemary
    1 tsp each Sage, Thyme and black pepper
    1 tsp Salt

Tips

recipe calls for milk, but I used rice milk


Directions

Saute potato, onion and carrot in butter/oil. Add broth, corn, salmon and spices. Cook 10 minutes. Add rice milk, heat through. You can add a little flour or cornstarch if you want to thicken it.
