Ingredients

1 head, large (6-7" dia) Cauliflower, raw
2 oz Parmesan Cheese, grated
1 large Egg, fresh, whole, raw

Directions
Crust
First you must put the cauliflower into a food processor until they appear to be rice-like bits. Do not over process it because you do not want a mush. After you have processed the cauliflower put it into a bowl and microwave it for 5-8 minutes. After you microwave it, then put the cauliflower in a fine mesh strainer and drain it completely. After this, then put the cauliflower in a towel and drain out the excess water. Preheat the oven to 450 degrees and spray a muffin pan or cookie sheet with non-stick cooking spray. In a separate bowl combine the cauliflower with one egg, your parmesan cheese, Italian seasonings, crushed garlic and salt. Stir everything and make sure that it is well-mixed. Place the dough onto whatever you plan to cook this on and bake it at 450 degrees for 15 minutes. Once it is done cooking, add the sauce, cheese, and all of the toppings and place the pizza back into the oven until all the cheese is melted.
Sauce
Preheat your oven to 375 degrees. Cut the tomatoes and jalapeņo into cubes and place them into a mixing bowl. Add all the ingredients into the bowl, just save some of the olive oil. Then place the coated tomatoes and bake them until the tomatoes are brown on the outside. Remove them from the oven and let them cool for about 5 minutes. Then blend them in a food processor with the other ingredients. Place them on a medium pan and add the remaining olive oil and heat for 30 seconds. Add the blended sauce, stir well, and add it onto the pizza.
Toppings
Add the cheese and other toppings on top of the sauce on the pizza. Then place the pizza back into the oven until all the cheese is melted.
