Introduction

You can make any other cake mix into a cookie using this same recipe, just substitute the cake mix, but leave everything else the same.

For a little extra taste and/or nutrients, add shredded coconut, walnuts, chocolate chips, etc. (just remember to adjust the nutritional information for the additions)

Ingredients

    1 Box of Duncan Hines Moist Deluxe Spice Cake cake mix
    1/2 cup Vegetable/Canola Oil
    1/2 cup Egg Beaters with Yolk OR 2 large eggs

Directions

Preheat oven to 350F. Stir dry cake mix, oil and eggs in a large bowl until dough forms. Dust hands with powdered sugar and shape dough into 1/2 to 1 inch balls. Roll balls in powdered sugar and place 2 inches apart on an ungreased cookie sheet. Bake for 8-10 minutes or until center is just set. Remove from pans and place on a cooling rack.
