Introduction

A great way to get in lots of flax. I've made this recipe once so far, and I think some cocoa powder would be good. And can substitute raisins for chocolate chips. A great way to get in lots of flax. Ingredients

    1 cup Coffee Flour (Sprouts bull bins)
    1.33 Bob's Red Mill - Organic Whole Ground Flax Seed Meal
    0.5 cup Peanut Butter, smooth style, with salt
    1 medium (7" to 7-7/8" long) Banana, fresh
    0.75 cup Kirkland Organic Soy Milk Vanilla
    4 tbsp Pancake Syrup
    0.25 cup, unpacked Brown Sugar
    1 tsp Vanilla Extract
    1 tsp Cinnamon, ground
    0.33 cups Chocolate, Nestle Real Semi-Sweet Chocolate Chips

Directions

Mix all ingredients, spread about 1/2" deep in muffin tins and bake at 325 for 25 minutes. Allow to cool for a few minutes before removing to wire rack.

Serving Size: Makes 18 cookies
