Introduction

Number of Servings: 4

Ingredients

    2 cup Orca Heritage Beans
    1.5 cup, sliced Mangos
    .5 cup, sections Oranges
    1 pepper Jalapeno Peppers
    2 tsp Lime Zest (by SMARTIEBEE)
    .25 cup Lime Juice
    .5 tsp Salt
    .25 tsp Pepper, black
    .25 tsp Cumin, dried, ground (by JANYTOO)
    2 fruit without skin and seeds Avocados, California (Haas)
    2 tbsp Mint - Spice (by EBEESTRUM)

Directions

Sort and rinse beans. Place in a medium pot with 4 cups of water. Cover and bring to a boil. Reduce heat to medium-low and simmer until soft, about 1 hour. Drain well and rinse throughly with cold water. Let cool completely. In a large bowl, combine beans, mango (diced), orange (chopped), jalapeno (minced), lime zest and juice, salt, pepper and cumin. Mix well. Gently fold in avocado (diced) and mint (minced). Serve immediately or chilled.
