Introduction

I am trying to make snacks for my (picky, SPD, HF ASD) kids, rather than buy them, and trusting the list of ingredients. Because of personal convictions, I am working at cutting out all animal products from our diet, which in the long run also benefits our health. Ingredients

    2 cup Quaker Oats Old-Fashioned Rolled Oats
    2 cup Flour - Unbleached White Whole Wheat (by CSIENK)
    2 tsp Baking Powder
    4 tbsp *Flax Seed Meal (ground flax)
    .25 cup Sesame Oil
    36 tsp Dark Brown Sugar, Pure Cane Sugar
    36 tsp Raw Sugar - Sugar in the Raw
    1 tsp Cinnamon, ground
    .5 tsp Ginger, ground
    .5 tsp Nutmeg, ground
    1 cup Coconut Milk (Silk)

Tips

I would have liked to add a cup of dried cherries, but my kids won't eat them. Make sure you factor that into your calories if you choose to.


Directions

Preheat oven to 450F, and prepare a medium to large cookie sheet (lightly greased foil or waxpaper)
2 cups whole grain white flour (or some other flour of your choice)
2 cups rolled oats
2 tsp baking powder
1 cup brown sugar
1 cup granulated sugar
1/4 cup flaxseed meal
1/4 cup oil (I used sesame)
1 tsp cinnamon, 1/2 tsp nutmeg and ginger
1-1.5 cup non dairy milk (I used coconut)
Blend all the ingredients, and spread evenly on the cookie sheet. Bake on top rack 20 minutes.

Serving Size: Makes about 24 2x2 inch pieces
