Ingredients

1 Zucchini, sliced about 2 cups
1 large Egg white, whisked
1/4 cup Great Value Bread Crumbs Italian Style
1/4 cup Cheese (Grated) - Parmesan Cheese - Kraft 100%
Directions
Preheat oven to 4oo degrees F and line a baking sheet with parchment paper.
Trim the ends of the zucchini and then slice into rounds about 1/4 inch thick. Whisk the egg white in a small bowl. Mix the parmesan cheese and the bread crumbs in another small bowl.
Dip the zucchini rounds into the egg white to coat both sides. Then using a fork, scoop the zucchini round into the bread crumb mixture, making sure to press into the mixture on both sides. Place in rows on the baking sheet and bake for 20 minutes or until the tops are golden and crisp.
Can be served with ranch dressing but you would need to make sure and add those calories.
