Introduction

Yummy and low in fat! very filling! Yummy and low in fat! very filling!
Number of Servings: 14

Ingredients

    1 can whole tomatoes
    1 can tomatoe paste(large)
    1 can tomato sauce (large)
    1 can yellow corn
    1 can red kidney beans
    1 tbs cumin
    1 tbs chili powder
    1 jar salsa
    2 cans chicken broth
    4 tbs mexican seasoning (I use Tastefully Simple)
    2-3 lbs boneless;skinless chicken

Directions

open all cans and pile in a big pot; wait to boil then reduce and simmer until flavors marry.

With the Chicken; boil in a sep. pot until done and then drain and pull apart and add to the already simmering stew as above. I boil my chicken w/ lots of pepper to give it more of a kick.
