Ingredients

    1 serving Couscous, Near East Whole Grain (Wheat) (1 cup)
    4 cup Arugula
    1 large whole (3" dia) Red Ripe Tomatoes
    .25 cup Parmesan Cheese, grated
    2 tbsp Olive Oil
    2 tbsp Balsamic Vinegar
    0.33 cup Pepitas (Pumkin Seed Kernals)
    .33 cup (not packed) Raisins
    4 oz Smoked Salmon (lox)
    .33 cup Sour Cream
    .125 cup Buttermilk
    .065 cup Lemon Juice
    1 tbsp Basil
    3 clove Garlic

Directions

mix these together, set aside for dressing:
.33 cup Sour Cream
.125 cup Buttermilk
.065 cup Lemon Juice
1 tbsp Basil
3 clove Garlic

cook the couscous, then mix all these together for the salad:
