Introduction

Ingredients

    6.0 ounces Chicken Breast (cooked), no skin, roasted
    1.0 cup (8 fl oz) Chicken Broth or Bouillon
    1.0 cup, chopped Carrots, raw
    2.0 stalk, large (11"-12" long) Celery, raw
    1.0 clove Garlic
    0.5 cup, chopped Onions, raw
    0.5 cup Spinach, frozen
    1.5 cup Lentils

Directions

Saute onions, celery, carrots and garlic in one tbsp. olive oil for five minutes. Add broth, 3 cups water, .5 tsp. seasoned salt, cracked pepper, Italian seasoning and lentils. Bring to a boil. Reduce heat and add chopped chicken. Simmer for 1 to 2 hours or until lentils are tender. Serve with a dollop of plain yogurt. Serving Size: Makes about 5 cups

    I created this hearty soup for myself and my co-workers. It was such an easy, healthy recipe, and I used sprouted lentils for added nutrition and less carbs. The ladies loved it and so do I! - 2/3/17
