Ingredients

    cumin .25tsp garam masala 1 onion finely chopped 7oz cucumber seeded finely chopped 9oz small cooked shelled shrimp 3tblsp finely chopped fresh cilantro salt

Directions

bring a pan of water to a boil. cut a small cross in each tomato then drop it in the boiling water for 1 min remove the tomatoes from the hoot water and immediately plunge them into ice-cold water peel the tomatoes then cut them in half scoop them out the seeds and finely dice the flesh put the coriander cumin and garam masala in a dry skillet over midium-high heat and stir for 15 seconds add the onion and continue stirring constantly for 2 minuets the mixture will be very dry add the tomatoes and cucumber to the pan and stir for two minutes add the shrimp and stir for an additonal two minutes just to warm them though stir in the cilantro and salt to taste serve hot or at room temperature with the pooris and lemon wedges for squeesing ower
