Ingredients

.5 cup, chopped Pecans
.5 cup, chopped Walnuts
2 tsp Vanilla Extract
1.5 cup Libby's 100% Pure Pumpkin Puree (by TEQUILAMY)
2 large Egg, fresh, whole, raw
2 large (8" to 8-7/8" long) Banana, fresh
4 tbsp Honey
2 tsp Cinnamon, ground
1 tsp Ginger, ground
3.5 cup Quaker Oats Old-Fashioned Rolled Oats
Directions
1. Use fork to mash the bananas
2. Add vanilla, pumpkin, eggs, and honey and stir until smooth.
3. Add oats, nuts, and spices and stir until combined.
4. Pour into a greased 9x13 glass baking dish. Use rubber spatula to smooth batter to the edges of the pan.
5. Bake @ 350 for 20-25 minutes
NOTE: If mixture seems runny add more oats to thicken up before baking. The moisture content of banana or pumpkin have a large impact.
