Introduction

Ingredients

1 Lb boneless,skinless chicken breast; cooked and shredded
1 Lg yellow onion, chopped
2 cns enchilada sauce
1 8oz pack reduced fat cheddar (I use weight watchers mexican)
! can Fat free refried beans
2 tbsp smart balance light
1 pk corn tortillas
your favorite seasonings!
Directions
* Pre-heat oven to 350.
*Par-boil chicken breast with some spices.
Let cool and shred.
*Take kitchen shears and cut tortillas into triangles.(you should get 4 from each tortilla)
*Chop onion and sautee in smart balance. Mix with chicken and set aside.
*Cover bottom of casserole dish with enchilada sauce and layer with corn tortillas. Then refried beans, chicken mix,sprinkle with cheese.
*Again layer with sauce, tortillas, beans, chicken and cheese. Do this until all ingredients are used and top with cheese.
* Bake at 350 for 30-40 min.
* This recipe makes 4-6 servings.
