Introduction

This is a nice pizza. I like the parmesean flavor, but if you want to keep fat down, use a light mozzarella. This is a nice pizza. I like the parmesean flavor, but if you want to keep fat down, use a light mozzarella.

Ingredients

    One Joseph's Heart Healthy Low carb pita
    One wedge Laughing Cow LIght Swiss cheese
    1/2 cup sliced summer squash
    1/2 cup sliced small zuchini
    1tbs olive oil
    Salt/Pepper
    2 TBL grated Parmesan
    Fresh herbs (I used Cilantro)

Directions

Roast veggies with Olive oil, salt, pepper and herbs in oven at 350 for about 1/2 hour.
Spread the Laughing Cow on the pita, top with veggies, then sprinkle parmesan on top. Return to oven for another 20 minutes or so.

Play around with roasted veggies/spices/herbs.
