Ingredients

    1 serving English Muffin, Multigrain British Style: (1s=1muffin/76g) Trader Joe's (by MOCHAMONKEY)
    0.5 cup Spinach, sauteed (by CHRISTIEYCPTWIN)
    1 large Poached Egg
    2 large Egg Yolk
    0.25 serving Lemon, fresh squeezed, juice of one whole lemon
    0.5 tbsp Organic Valley Organic Half & Half
    2 serving Country Crock, Shedd’s Spread Country Crock Regular (Soft), 1 Tbsp

Tips

This makes the recipe with only 1 poached egg to lighten up the calories.


Directions

Make hollandaise sauce, set aside. Sautee spinach in 1 tbls of margarine, set aside. Poach 1 egg while toasting english muffin. When egg is cooked, 5 minutes, half spinach and place 1 half on each half of muffin. Add poached egg to top of one muffin and spoon half of hollandaise sauce on top. Pour remaining sauce on top of spinach on remaining half of english muffin.
