Ingredients

    1.5 lbs potatoes, silced thin
    1 c zucchini, halved and sliced thin
    1 med onion, sliced thin
    1 tsp butter
    1 tsp olive oil
    2 c chopped ham
    1 tub chive and onion cream cheese spread
    1 3/4 c nonfat milk
    1/2 Tbsp spicy brown mustard
    1/4 c parmesan cheese
    freshly ground black pepper
    1/2 tsp tarragon

    .5 tsp olive oil (for greasing casserole dish)

Directions

Preheat oven to 350.
Grease a 2 qt casserole w/ 1/2 tsp olive oil, set aside.

In medium saucepan over heat, saute onion in 1 tsp each butter and olive oil. Salt lightly and stir frequently, until onions are browned and soft. Add in tub of cream cheese spread and milk, stirring to combine and smooth. Add in mustard and pepper and cook until slightly thickened and bubbly.

In a bowl, combine potatoes, ham, zucchini and sauce; toss gently to combine and transfer to baking dish.

Bake, covered 1 hour, or until potatoes are tender.
Uncover, stir carefully and bake 10 minutes more.

Let stand 5 - 10 minutes before serving.
Makes 6 servings.

    This recipe makes a large dish of casserole. I'd probably cut back if I made it again to avoid leftovers. Potatoes are not an integral part of my South Beach Diet, so I wouldn't make it very often! It was pretty tasty and a good way to use up leftover ham and potatoes. - 6/8/08
