Introduction

Ingredients

2 large portabella mushrooms, stems removed
2 oz part skim shredded mozzarella cheese
4 T shredded parmesan
1 cup marinara sauce
Salt and pepper to taste
Cooking spray as needed
Directions
Preheat oven to 400 degrees, and set a grill pan or saute pan to medium high.
Spray both sides of mushroom caps with cooking spray, and season with salt and pepper.
Grill mushrooms on both sides for five minutes, or until tender.
In a small casserole dish, spread 1/2 cup of the marinara sauce.
Place mushrooms, cap side down in the dish. Spread the rest of the sauce evenly over the gills of each mushroom.
Top each mushroom with 1 oz mozzarella and 2 T parmesan.
Bake in the oven for about 10-15 minutes or until bubbly and golden on top.
Serve with a caesar salad for a great low carb meal or with pasta if you're feeling sinful!
