Ingredients

    4 Mission soft taco size low carb tortillas
    4 oz. reduced fat mexican cheese
    1 can whole kernel corn
    enchilada sauce (I prefer medium Old El Paso)
    1 pound extra lean ground beef
    1 small onion, chopped

    Cook the beef and saute the onions. Pour a little enchilada sauce in bottom of square baking dish to keep the tortillas from sticking. Cut tortillas into strips about 1-1/2" wide. Layer some of the tortilla strips on bottom of baking dish to cover. Mix all the other ingredients together except for the cheese and pour 1/2 of it on top of tortilla strips. Repeat the layers one more time. Cover with last of the tortilla strips. Pour a little bit more enchilada sauce over the top and cover with cheese. Bake at 375 for 15-20 minutes until cheese is melted. Enjoy!
