Ingredients

    Egg, fresh, 4 large
    egg white, fresh, 4 large
    Broccoli, fresh, 1 cup, chopped
    Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia)
    Onions, raw, .5 large
    Jennie-O Extra Lean Turkey Bacon (1 serv = 1 slice), 5 serving
    *Kraft 2% Shredded Cheddar Cheese, 0.25 cup
    *Laughing Cow Light Creamy French Onion 1 wedge, 2 serving
    *Extra Virgin Olive Oil, 1 tbsp
    Basil, 5 leaves
    Red Ripe Tomatoes, 1 medium whole (2-3/5" dia)

Directions

Heat extra virgin olive oil in a skillet tht is also oven-safe. Chop veggies (except for the tomato) and cook in the skillet until tender.

Meanwhile, in another pan cook the turkey bacon. When finished, set aside. Crumble turkey bacon when cool.

Beat the 4 eggs and 4 egg whites in a bowl. Can add salt, pepper and other spices to desire. I usually add dill weed and chives (fresh or dried). NOTE: I save the basil for the end and do not add here.

Pour eggs into the skillet with vegetables. Add crumbled bacon and shredded cheddar cheese. Cook until eggs have set. Cut the laughing cow cheese wedges into pieces and place on top of the cheese mixture. Take the skillet off the bruner and place under the broiler until eggs are set on top and cheese is melted and slightly browned.

Once you take the pan out of the oven, slice the tomato and place tomato slices on top of the skillet. Sprinkle chopped basil leaves on top of tomato slices.

Nutritional information is calculated for 4 servings. Can cut into 8 wedges for more servings and 1/2 the nutritional information.
