Ingredients

    2 cup Red Pack Whole Peeled Plum Tomatoes
    2 cup, cubes Eggplant, fresh
    2 cup, sliced Zucchini
    2 serving 1 Med. Green Bell Pepper
    1 serving Half A Yellow Onion (by CARMELON)
    1 cup, pieces or slices Mushrooms, fresh
    2 tsp Garlic
    2 tbsp Extra Virgin Olive Oil

Directions

Salt and pepper to taste and then combine all veggies in bowl; toss to mix well. Spread mixture evenly in 11 x 13 roasting pan that has been sprayed with nonstick spray. Cover with foil. Bake at 450 for 15 min; remove foil and bake another 15 in; turn veggies and bake for 15 min. more
