My mom's simple potato salad recipe that my family has enjoyed for years! My mom's simple potato salad recipe that my family has enjoyed for years!
Number of Servings: 7

Ingredients

    6-7 new potatoes
    2 eggs
    1 medium sized onion, chopped
    4 heaping tablespoons of Miracle Whip
    Salt to taste
    Pepper to taste

Directions

Boil potatoes and remove skin. Boil eggs until hard boiled.

Chop both and mix in large salad bowl.

Mix in chopped onion.

Add 4 heaping tablespoons of Miracle Whip or other salad dressing. Stir well until creamy
Top with sliced boiled egg if you wish, and salt and pepper to taste.
