Directions

Melt butter in saute pan over medium heat, add garlic. Stir, and cook until it begins to become golden. Add sliced mushrooms, cook, stirring occasionally for 5-7 minutes, or until tender, but still firm. Cook egg noodles al dente, according to package directions, 7 minutes at a rolling boil in salted water. Drain.

Add mayo, cream of mushroom soup, pepper, tuna, garlic and mushrooms, and frozen spinach broken into small pieces, or thawed to spread through casserole. Fold ingredients in gently, but mix well.

Spread mixture into 9x13 dish, distributing equally. Top with shredded cheese. Crush ritz crackers, and sprinkle on top of the cheese.

Baked, covered with foil for 30 minutes. Remove foil, and bake uncovered and additional 10 minutes. Remove from oven and let sit for 3-5 minutes. Enjoy!
