Introduction

Ingredients

    2 avocados, cut into 1/2/ inch cubes
    1 can black eyed peas (drained)
    1 can diced tomato with onion (drained)
    1/2 cup of fat free or light Italian dressing
    1 T lime juice
    1/1 tsp. salt

    That's it. Just mix it all up and serve with something to scoop it up.

    ** Canned black eyed peas are hard to spot in the grocery store. Mine has them by the regular canned vegetables instead of by the beans. If I was in a pinch, I'd substitute black or navy beans.
