Number of Servings: 6

Ingredients

    1 head, medium (5-6" dia) Cauliflower, raw
    4 tbsp chopped Onions, raw
    1 1tsp Olive Oil
    1 tsp Cumin seed
    4 clove Garlic, minced
    1 Shallot- diced
    2 stalk, large (11"-12" long) Celery, raw , diced
    2 medium Carrots, raw , diced
    16 oz Ground beef
    2 1/2 T Tomato Paste
    1/2 Cup Red Wine
    1.5 cup Beef stock, home-prepared

Directions

1. Microwave cauliflower til done. Food process until smooth, add 1T Oil process again, put aside.
2. Using a large pan over medium heat sauté the onions and garlic until fragrant. Then toss in the celery, carrots, and cumin. Cook for 5 minutes or until the vegetables start to brown, put aside.
3. Using the same pan, toss in the ground beef and cook until brown, add the tomato paste and thyme.Cook for 1 minute
4. pour the wine and stock. Simmer for at least 10 minutes while stirring occasionally. Season with salt and pepper."
5. In a casserole dish put meat on bottom, then the mashed mix on top.
Bake in an 350 oven for 30 minutes.
