Ingredients

¼ cup vanilla caramel creamer
¼ cup baileys
½ tbsp cocoa
½ tbsp espresso powder
1 tsp vanilla
3 eggs
⅔ cup sugar
1 ¼ cups all-purpose flour
2 cups whole wheat flour
1 tbsp baking powder

Powdered sugar and Baileys for icing
Directions
Heat the oven to 375 F and line cookie sheets with parchment paper.
In a medium bowl, beat together the creamer, baileys, cocoa, espresso powder, vanilla, eggs and sugar.
Add flours and baking powder, stirring to form a heavy dough.
Divide dough into two pieces. Form each piece into a roll and place one on each cookie sheet, pressing down to ½” thick.
Bake for 30 minutes.
Cool until easily handled, then slice each one crosswise into ½” slices.
Place the slices cut side up back onto the baking sheet.
Bake for an additional 10 minutes on each side. Turn off the oven and cool inside before frosting.
Serving Size: Makes ~16 slices
