Number of Servings: 12

Ingredients

    4.5 lb Beef Pot Roast
    1 tsp salt
    1 tsp garlic
    1 tsp rosemary
    Your favorite spices!

Directions

Preheat oven to 450 F. Season roast with salt, garlic, rosemary & favorite spices.

Cook roast in oven for 30 min. Reduce heat to 350 F and continue to cook for 90 min (20 min / lb).

Remove roast from oven and wrap tightly in tinfoil (shiny side facing meat) Place wrapped roast on a plate on the counter for 30 min. (The roast continues to cook in it's own juices while on the counter top). Enjoy!!

    This was a good recipe. I like the fact that the recipe allows you to use whatever spices that you usually use but that the technique is what makes the roast retain it's juiciness. - 5/11/09

    I love this recipe. The only thing I would change is to sear the meat on all sides (4 min a side) over medium heat in a large cast iron skillet or dutch oven before putting in the oven. This will make the meet even juicer and give it a nice texture on the outside. - 3/4/12

    THIS RECIPE ROCKS! And I am a usually a harsh critic! I have been trying to cook a moist roast beef for years without success. This technique TRULY makes this roast beef moist. The only change I made to the recipe was to double the spice measure - but that's merely a personal taste preference. - 11/2/11
