Ingredients

    1 pat (1" sq, 1/3" high) Butter, unsalted
    4 large Egg, fresh, whole, raw
    2 stalk, large (11"-12" long) Celery, raw
    .25 cup, chopped Onions, raw
    5 serving Cherry Tomatoes, Fresh, 1 Tomato
    1 oz Blue Cheese 1 cup Spinach, fresh

Tips

I added Mrs. Cash and pepper because of salt restrictions


Directions

Dice onion, celery, tomatoes in butter. Add spinach, cook down then add egg, season to taste, cook until set.Add cheese.When melted flip and turn off heat. Serve
