Introduction

Kind-of a mexican chili with chicken. Very easy , full of fiber and with some low fat shredded cheese....yummy!!! Also, could be made with ground turkey and throw it all in a crock pot.. Ingredients

    1 Cn kidney beans
    1 Cn pinto beans
    1 Cn black beans
    1 Cn chick peas
    (any other bean you like)
    1 Cn corn
    1 Cn Vegetable or chicken broth
    1/2 onion chopped
    1/2 bell pepper chopped
    1/2 ancho or pablano pepper chopped
    1 cn crushed tomatoes
    1 pk taco seasoning
    * chili powder, salt, papper and garlic to taste.
    2 poached chicken breast, cooked and shredded

Directions

*Take all ingredients and throw them in a pot on the stove or in your crock-pot. Cook on low in crock-pot all day or on the stove for about 30 min. Serve with shredded low-fat cheddar. Serve with chips, crackers or corn bread .
