Introduction

If you don't care for cooked asparagus, you WILL like it raw...especially as a light Spring salad. If you don't care for cooked asparagus, you WILL like it raw...especially as a light Spring salad.

Ingredients

    350 grams Asparagus, fresh
    1 serving Lemon, fresh squeezed, juice of one whole lemon
    3 tbsp Extra Virgin Olive Oil
    2 oz Prosciutto (fried)
    1oz Shaved Parmesan Cheese
    Salt & Pepper to taste

Tips

Remove woody ends of the stalks, and rinse. Use a vegetable peeler to shave the asparagus stalks, but keep the tips for another meal. The salad will keep well for a few days in refrigerator.


Directions

Shave each stalk of asparagus, but cut off tips and retain to steam at another time. Lightly fry prosciutto in a pan sprayed with Pam. Be careful to not overcook it. Whisk lemon juice, olive oil, salt and pepper and pour over shaved asparagus, toss well, top with shaved parmesan and torn prosciutto. Chill for at least 20 minutes prior to serving.
