Number of Servings: 6

Ingredients

    4 oz Mozzarella Cheese, part skim milk
    6 tbsp Parmesan Cheese, grated
    2 large Egg, fresh, whole, raw
    6 tsp Lea & Perrins, Worcestershire Sauce
    0.5 cup, chopped Onions, raw
    3.5 medium (approx 2-3/4" long, 2- Sweet peppers (bell)
    12 oz Ground beef, lean

Directions

Place 6 pepper halves in bowl with 1/2 cup of water; cover with micro-safe plastic wrap and cook on high 5 minutes; turn and cook3 minutes more. Drain and set aside to cool. Coat a large skillet with food release spray. Chop the onions and a bell pepper half and place in skillet over medium heat; saute until clear; add ground beef and cook, stirring until browned. Allow to cool; add beaten egg, Worcestershire and Mozzarella. Mix well and stuff into pepper halves. Place in oiled ovenproof dish; sprinkle with Parmesan and and bake at 350 degrees F. for 45 minutes.

Serving Size: Makes 12 servings, small servings or 6 large servings
