Ingredients

    Crust:
    1.5 cup, chopped Pecans
    1.0 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    1.0 stick Butter, salted
    3.0 tsp xylitol
    Filling
    8.0 oz Cream Cheese
    1.0 cup, fluid (yields 2 cups whipped) Heavy Whipping Cream
    48.0 tsp xylitol
    3.0 tsp Vanilla Extract
    Topping
    8.0 serving Jello - Sugar Free Strawberry - 1/2c 2.5g
    2.0 cup Great Value Frozen Whole Strawberries

Directions

For the crust: Use crushed pecans and melted butter. Mix all ingredients together. Press in springform pan. Bake at 400 for 8-10 min. Let cool completely. Filling: Cream sugar substitute and cream cheese. In separate bowl whip heavy cream and vanilla. Fold whipped cream into cream cheese. Spread into pan with cooled crust. Topping: Boil 2 c water. Pour in Jello. Let jello dissolve and add strawberries. Once at egg white consistency pour over filling. Let firm.
