Ingredients

    1 lb chicken breast, cut into 4 servings
    1 tsp salt
    1/4 tsp cayenne pepper
    1/4 tsp black pepper
    1/2 cup finely diced red onion
    2 tbsp lime juice
    1 avocado, diced
    2 tbsp olive oil

Directions

Mix salt, pepper, and cayenne. Rub on chicken breast. Cook in nonstick skillet w/olive oil until cooked through.

Mix red onion, lime juice and avocado. Serve over chicken.

    I liked this quite a bit. I doubled the black pepper and threw the chicken on my george foreman grill. That way, I didn't have to use the oil. Served it with some boiled potatoes and voila! Very good meal and sooo simple! Will make again. - 7/5/08

    I liked this for me, but I eat right. I sprinkled cumin on my finished chicken and salsa and added some hot sauce cuz I just can't help it. It's all good. Simple? Yes, it takes this long to make a fulfilling sandwich on wheat, lettuce, and all that. I likey!! - 6/24/08

    Incredible!
    This is really good. I used yellow onions instead and stir fried in a vegetable mixture (snow peas, grated carrots, etc). Served over brown rice, really good! - 2/5/12
