Ingredients

    1/2 cup dry bulgur wheat
    1/4 cup fresh-squeezed lemon juice (bottled is OK too)
    2 Tbsp. water
    5 Tbsp. extra virgin olive oil
    1 Tbsp. lemon juice
    2 cups parsley. finely chopped
    4 green onions, finely chopped
    2 Tbsp. fresh mint leaves, finely chopped
    10 grape tomatoes, quartered
    1/2 cucumber, seeded and diced

Tips

Makes about 4 cups without the tomatoes and cucumbers.
8 servings, about 1/2 cup each


Directions

In a medium bowl, soak bulgur in ¼ cup lemon juice and 2 Tbsp. water until grains are tender and fluffy—about 30–60 minutes. Add olive oil, 1 Tbsp. lemon juice, parsley, green onions, and mint; mix well. Stir in tomatoes and cucumber. Refrigerate for 1–2 hours before serving.
