Ingredients

3 lbs Pork Tenderloin
2.5 tbsp Extra Virgin Olive Oil
6 tbsp Goya Chipotle Marinade
Chopped white onion (to taste)
Chopped green bell peppers (to taste)
Chopped red bell peppers (to taste)
Minced garlic (to taste)
Salt (to taste)
Black pepper (to taste)
Directions
1. Place pork in slow cooker, fat cap up. Poke holes along tenderloin with knife
2. In a small bowl combine, olive oil, marinade, salt, pepper, and garlic.
3. Pour marinade over over pork loins
4. Chop onion and peppers, spread along tenderloins
5. Cook on low for 8 hours or high for 6 hours. If on high, flip pork every 2 hours.
6. Remove pork and shred, return to slow cooker and mix with marinade. Set to low and cook for 30-60 minutes.
7. Can be served immediately or allow to cool for 1 hour then refrigerate.
