Introduction

Number of Servings: 4

Ingredients

    1 pound ground turkey, 93% lean
    1 cup zucchini, grated
    1 small onion, finely chopped
    2 cloves garlic, minced
    1 Tbsp olive oil
    2 tbsp Parsley, dried
    2 eggs, beaten
    1 tsp oregano, dried
    1 Tbsp Greek Seasoning - salt free (I use Penzeys)
    1 tsp Pepper, black
    1/2 tsp salt
    4 oz Feta Cheese

    Sauce:
    1 cup European cucumber, peeled and grated
    1/4-1/2 tsp salt (to taste)
    2 cloves garlic, minced
    1 tbsp Lemon juice
    2 tbsp Extra Virgin Olive Oil
    4 oz Greek whole-milk yogurt

    Salad:
    8 cups romaine lettuce, shredded
    1/4 cup red onion, thinly sliced
    24 grape tomatoes, halved
    1/4 cup Greek salad dressing (olive oil based)


Directions

Burgers:
Spread zucchini in a clean kitchen towel, roll it up and wring out excess liquid. Saute onions and garlic in olive oil until soft. Combine all burger ingredients except feta cheese and mix well. Turn on broiler to preheat. Line a cookie sheet with foil and spray with cooking spray. Shape meat mixture into 4 flat patties and place on lined cookie sheet. Sprinkle each with 1 ounce crumbled feta and lightly press it into the patty. Broil 10-12 minutes until an instant read thermometer registers 165F.

Tzatziki Sauce:
Place grated cucumber in a clean kitchen towel and wring out excess moisture. Mix with salt, garlic, lemon juice, olive oil, and yogurt. Set aside.

Salad:
Toss romaine and onion with dressing and divide between 4 plates. Top with tomatoes (12 halves per plate).
Place 1 burger patty next to each salad and top with tzatziki sauce.

Serving Size: 4 large patties with sauce and salad
