Ingredients

    4 Salmon Fillets
    2 tsp Mrs. Dash (R) Lemon Pepper Seasoning Blend
    1 tsp sea salt
    2 tbsp Olive Oil
    1 tsp Garlic
    1.5 - 2 lbs Fresh Spinach
    Juice of a half of a lemon - approx 2 Tbsp
    2 tsp Butter
    1 cup small cherry tomatoes (halved)
    0.25 tsp crushed red pepper flakes
    1 tbsp Parsley Flakes
    3 Tbsp Orange Juice

Directions

Season salmon with salt and lemon pepper.
Heat a large sauté pan with olive oil
Place salmon in hot oil and let cook for 4 minutes each side
Remove from pan and let rest for 10 minutes
Use same sauté pan with drippings to lightly brown garlic
Add spinach, (salt & pepper to taste - if desired), and lemon juice and cook for approximately 3 minutes
In a separate sauté pan heat butter to melt
Add tomatoes, red pepper flakes, parsley, and orange juice and cook for approximately 5 minutes or until tomatoes slightly tender
Serve layered on plate with Spinach on bottom, topped with salmon, then tomatoes.
Makes a beautiful, filling, and healthy meal!
