Ingredients

    4 large Egg, fresh, whole, raw
    0.25 cup, chopped Onions, raw
    0.25 cup, chopped Green Peppers (bell peppers)
    0.25 cup Parmesan Cheese, grated
    0.25 cup, chopped or sliced Red Ripe Tomatoes
    2 cup Marketside Baby Kale & Spinach Blend (baby kale, baby spinach, red & green chard, fresh arugula)
    0.25 cup Harris Teeter Shredded Sharp Cheddar Cheese
    .625 cup Soy Milk

Directions

In a bowl, whisk together eggs, milk, parmesan, salt, pepper. Set aside. In small/med frying pan, brown onion with garlic. Add peppers and tomatoes until soft. Add spinach. When spinach has wilted, mix with other ingredients in pan. Cover the bottom of the pan with the veggies. Pour egg mixture on top. Sprinkle cheddar cheese on top. Cover and cook on low/med for 10-12 min. Transfer to oven-safe place, broil for 3-4 minutes until top is browned.
