Ingredients

    15 oz can black beans
    1/2 onion, chopped
    1 c mushrooms, diced fine
    1 jalapeno pepper (fresh), diced
    1 c ripe fresh tomatoes, diced
    2 cloves garlic, diced
    8 oz amber or dark beer
    2 tsp paprika
    1 tsp dried, ground ancho pepper
    1 tsp salt
    1 tsp cumin
    1 tsp dried oregano

Directions

1. Spray heavy pot with oil
2. sweat onions and mushrooms until soft (cook on low heat for 5-10 min)
3. add garlic, tomatoes, and jalapeno, cook until soft and tomatoes have released their liquid
4. Add spices and beer
5. Bring to boil
6. Reduce to simmer and cook until chili has reduced to a thick consistancy, 20-30 minutes
7. Enjoy with cornbread or crackers!
