    1 15-oz can low-sodium Northern White Beans (or garbanzo beans), rinsed & drained
    1 15-oz can low-sodium diced tomatoes, rinsed & drained
    2 medium cucumbers
    1/4 c. crumbled low-fat feta cheese

    2 T. red wine vinegar
    2 T. water
    1 T. lemon juice
    1 T. tahini (sesame seed butter)
    1/4 t. salt
    1/2 t. oregano
    1/2 t. basil


1. Half cubumbers lengthwise, & slice into quarter-inch pieces. Put in salad bowl with beans & tomatoes.

2. Chill for 1 hour before serving.

3. Whisk together salad dressing ingredients ingredients & pour over salad. Mix in crumbled feta cheese and toss to combine..
