Introduction

Ingredients

    2 1/2 cups flour
    1 heaping teaspoon baking powder
    1 teaspoon baking soda
    1 1/4 cups brown sugar ( I used splenda Brown sugar)
    1/4 cup vegetable oil ( I used canola)
    1/4 cup applesauce
    1 egg
    1 cup buttermilk
    2 cups rhubarb, diced
    1/4 cup chopped walnuts ( I used black walnuts)

Directions

Sift flour, baking powder, and baking soda. Beat together brown sugar, oil, applesacue, egg, and buttermilk. add flour mixture and stir until flour is barely moistened. Fold in rhubaarb and nuts. Fill muffin cups 2/3 full. bake 25 minutes at 350 degree F. 24 muffins.
