Ingredients

    4 oz Pink Salmon (fish)
    .5 oz Athenos Reduced Fat Feta Cheese
    3 leaf Spinach, fresh
    0.25 tsp Mrs. Dash (R) Lemon Pepper Seasoning Blend
    1 1tsp Olive Oil

Tips

Skin on Salmon bakes well and keeps salmon from drying out.


Directions

1. Chop or slice spinach into fine strips. ( About 2 tablespoons.
2. Cut a slit down the center of the salmon fillet and fill the slit with the spinach. Them add the tablespoon of Feta Cheese on top of the spinach and press into the salmon as necessary.
3. Sprinkle with Lemon Pepper Seasoning and brush the Salmon with the olive oil.
4. Bake in 375 degree oven for 15 minutes until baked though.
