Introduction

This is one of my favorite comfort foods! I took a low-fat recipe and adjusted to make it even healthier and tastier (and easier!)! Moist and delicious and perfect warm with a bit of peanut butter smeared on top! Yum! Enjoy! This is one of my favorite comfort foods! Ingredients

    1 1/2 c Whole Wheat Flour
    1/2 c Wheat Bran
    1/2 tsp Salt
    3 tsp Baking Powder
    1 tsp Baking Soda
    6 packets of Splenda
    3 Medium sized bananas
    1/4 c unsweetened applesauce
    1/4 c egg substitute
    3/4 c Fat Free Buttermilk
    1/2 tsp cinnamon
    1/2 tsp vanilla extract
    6 dates, chopped

Directions

Preheat over to 350.

Mash bananas in bowl. Add in egg substitute, buttermilk, vanilla, cinnamon, and applesauce. Mash together until well combined.

Sprinkle flour, wheat bran, salt, baking powder, baking soda, and Splenda on top of wet ingredients. Mix together until combined.

Add chopped dates and fold until dates are mixed in.

Spray a loaf pan with non-stick cooking spray and pour in batter.

Bake for 50 minutes or until inserted knife comes out clean.

Makes 12 servings! YUMMMMMM!
