Introduction

Ingredients

    1/2 cup all purpose flour
    1/2 cup 2% milk
    1/4 tsp Salt
    2 Tbsp Butter, salted - melted
    1 large Egg,raw, beaten
    1/2 cup, diced Ham, extra lean, (5% fat)
    1/2 cup 2% shredded cheese - American, Swiss, favorite blend
    1/3 cup Half and Half Cream

Tips

This is a variation of an old recipe I learned in Home Ec back in the 60's! The filling can be varied to meet special dietary needs or to your personal tastes.


Directions

1. Preheat oven to 350 degrees. Spray an 8x8" baking dish with cooking spray, set aside.
2. Lightly oil a small 6" cast iron or similar skillet; begin heating it on a small burner set at medium.
3. Make a batter from the first 5 ingredients (flour through the egg). Cook like pancakes, pouring a small amount of batter in the skillet, tilting the pan around to cover the bottom of the pan. Turn once, cooking until done but not brown.
4. Divide the ham between the 8 crepes, add a small amount of shredded cheese, reserving some cheese to sprinkle over the top. Roll up the ham & cheese in the crepes like enchiladas.
5. Places rolled crepes next to each other in the prepared baking dish; sprinkle the reserved cheese on top then pour half and half over all.
6. Bake until they are bubbly and thoroughly heated. Enjoy!
