Introduction
Great family dinner! Not too spicy for the kids but enough flavor for the parents! My daughter loved eating this soup with tortilla chips. Great family dinner! Not too spicy for the kids but enough flavor for the parents! My daughter loved eating this soup with tortilla chips.Number of Servings: 6
Ingredients
-
1 lb. ground beef
1 pkg. (32 oz.) reduced-sodium beef broth
1 can (15 to 16 oz.) black beans, rinsed and drained
1 can (14.5 oz) diced tomatoes
1 pkg. (1.25 oz) reduced sodium taco seasoning
1 can (11 oz.) whole-kernel corn with sweet peppers
Tortilla chips, optional
Directions
1. In a large saucepan (or a soup pot), cook beef until browned. Drain off fat. Stir in broth, beans, tomatoes, and taco seasoning. Bring to a boil over high heat; reduce heat and let simmer, uncovered for 15 minutes, stirring occasionally.
2. Stir in corn, heat a few minutes more. Serve with tortilla chips if desired. Or if you'd rather, you could top it with cheese or sour cream.
Makes 6 servings, about 1.5 cup per serving. You could make it even lower calories if you use low fat ground beef; I used 80% lean, which is pretty fatty, but it is so much cheaper (I got it for 99 cents a pound).
